Grilled cheese, ham, and apple sandwich

Ingredients

  • 6 tablespoons butter, softened, divided
  • 8 slices sourdough bread
  • 3 tablespoons mayonnaise
  • 3 tablespoons finely shredded Manchego or Parmesan cheese
  • 1/8 teaspoon onion powder
  • 1/2 cup shredded sharp white cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Gruyere cheese
  • 4 ounces Brie cheese with rind removed, sliced
  • 12 slices of deli ham
  • 1 tart apple, thinly sliced

Directions

1. Spread 3 tablespoons butter on 1 side of bread slices.

2. Toast bread, butter side down, in Ventray Grill over medium-low heat until golden brown. Set aside.

3. Mix together mayonnaise, Manchego cheese, onion powder and the remaining 3 tablespoons butter in a small bowl.

4. Combine cheddar, Monterey Jack, and Gruyere in another bowl.

5. Top 4 toasted bread slices with sliced Brie.

6. Sprinkle cheddar cheese mixture evenly over Brie.

7. Layer ham and apple slices over Brie.8. Top with remaining bread slices, toasted side facing inward.

9. Spread mayonnaise mixture on the outside of each sandwich.

10. Place in Ventray Grill again and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side.

11. Serve immediately.

Ingredients

  • 2 cups (240g) all purpose flour
  • 2 ½ tsp matcha green tea powder
  • ¾ cup (170g) unsalted butter softened (room temperature)

  • ¼-1/3 cup white chocolate chips or almond chips (optional)

Directions

  1. Add matcha powder to flour, sift it
  2. In Ventray stand mixer with flat beater attachment, beat butter until completely smooth, over medium speed
  3. Add pinch of salt, and powdered sugar, blend until soft and light, scrap sides of bow
  4. Add 2 large egg yolks, mix until well blended
  5. Gradually add dry ingredients blend until dough is smooth
  6. Add in chocolate chips or almond chips, blend for another 30 seconds
  7. Shape dough into cylinder, wrap with plastic wrap and refrigerate for at least 2 hours

Oven Directions

  1. Preheat oven at 350 °F
  2. Place parchment paper on baking pan, place cookies about 1-inch apart
  3. Bake for 15 minutes or until golden on the edges
  4. Remove from oven, cool for 5 minutes, then transfer to cooking rack and let cool completely

  5. Bake the other sheet, repeat the same baking steps

Tips

If you prefer more texture and a classic flavour of the old-fashioned chunky cookie, try rolled oats. Quick oats can be used to substitute.

When baking, your cookies are ready when they are brown at the edges, centres are soft and puffy, they might seem undone between the cracks.

Always rotate halfway through baking, make sure heat is distributed evenly to the cookies.
