Cranberry Orange Sauce

This cranberry sauce is a healthy twist on the classic, sweetened with honey and infused with refreshing orange zest.

Ingredients

  • 12 ounces fresh cranberries
  • 1/2 cup water
  • 1/4 cup honey or maple syrup
  • Zest of 1 orange
  • Juice of 1 orange

Directions

  1. In the plate of Ventray Grill, combine cranberries, water, honey (or maple syrup), and orange juice.
  2. Bring the mixture to a boil, then reduce the heat to a simmer.
  3. Cook for about 10-15 minutes, stirring occasionally, until the cranberries burst and the sauce thickens.
  4. Remove from heat, stir in the orange zest, and let it cool.
  5. Serve.

Directions

Step 1: Cook Shrimp

  1. Quick boil the shrimp, peel them and move to a bowl.
  2. Add some olive oil, garlic, salt, chilli, and black pepper. 
  3. Mix and marinate shrimp for 2 minutes.
  4. Heat olive oil in a pan over medium heat. 
  5. Add shrimp, stir for 1 minute, then move the shrimp to a small bowl.

Step 2: Making the Dressing and Stuffing

  1. Add garlic, salt, black pepper, olive oil, soy sauce to a saucer. Drip lime juice, and mix thoroughly.
  2. Heat tacos in a pan over medium heat for 2 minutes, and place them on a plate.
  3. Dish up green leaves, avocado, and onion on a plate. 
  4. Serve with tacos and garlic sauce.

Step 3: Assemble

  1. Put a lettuce leaf above a taco. 
  2. Add onion, avocado, and shrimp.
  3. Fold or roll the taco carefully, and dip the taco in a garlic dressing.
  4. Bite into the garlic shrimp taco.

About the Cuisine 

The beef recipe comes from Zhanjiang, a beautiful coastal city in southern China. Directions

  1. Step 1: Stir-Fry Beef Mixture

    1. Mix soy sauce, fish sauce, cornstarch, and chilli in a bowl.
    2. Add steak, and marinate for 2 minutes.
    3. Heat coconut oil in a skillet over medium-high heat. 
    4. Stir-fry steak for 2 minutes until browned. 
    5. Add beef broth, and boil. 
    6. Reduce heat to low, and gently cook for 1 minute until slightly thickened. 
    7. Add onion and pepper, simmer for 3 minutes until the pepper is tender-crisp.
    8. Turn off the heat, reserve.

     

    Step 2: Simmer Rice

    1. Boil the remaining beef broth in a saucepan, add butter and salt. 
    2. Add rice, and stir until boiling. 
    3. Reduce heat to low, simmer for 5 minutes until the broth is absorbed. 
    4. Move the rice to a shallow bowl.
    5. Serve with the beef mixture on top evenly.

Homemade spicy mayonnaise

Ingredients

  • 4 room temperature eggs
  • 1 tablespoon vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon white pepper
  • ½ teaspoon garlic powder
  • 1 1/3 cup oil (avocado oil, olive oil or vegetable oil)
  • ¼ cup sriracha hot sauce

Here are a few good tips for better tasting and thicker texture of homemade mayonnaise:

make sure the ingredients are in room temperature;
using a lighter tasing oil that you prefer, some might find EVOO too strong for mayonnaise;
to help with emulsification process, add in oil slowly, it will give you a thicker texture.

Homemade mayonnaise usually lasts 5-7 days in fridge.

Directions

  1. Separate egg yolks from egg white, add the yolk to Ventray blender
  2. Blend using speed setting 3 until completely smooth
  3. Add vinegar and all spices into the blender, pulse blend to mix well
  4. Add in oil slowly, using pulse function. Start off with a drop increase to a few drizzles when mixture starts to emulsify
  5. Add in sriracha sauce blend until smooth

  • 20 habanero peppers
  • 5 serrano peppers
  • 15 dried arbol chiles
  • 1 large sweet onion, cut into 8 wedges
  • 8 cloves garlic, halved
  • ¼ cup water
  • ¾ cup white vinegar

  • 3 tsp salt
  • 1 tsp ground pepper

  1. Cut habanero serrano peppers in half, combine arbol chiles
  2. Place all ingredients into the blender, blend on high until a smooth consistency
