Eggnog White Chocolate Cake

Ingredients

  • 1tbsp orange zest
  • 4tbsp brandy
  • 3 cups all purpose flour
  • 2 tsp baking powder
  • ½ tsp salt

½ tsp nutmeg

  • ¼ tsp cinnamon
  • ¼ tsp allspice
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 5 large eggs room temperature
  • 1 cup eggnog
  • 1 tsp vanilla extract
  • 2-4 tsp brandy for drizzling on the cake (optional)

  • 1-2 tbsp orange juice
  • 1 tbsp brandy, dark rum
  • 1 cup powdered sugar

Directions

  1. Soak orange zest in brandy in a small bowl for at least 15 minutes
  2. In Ventray Stand mixer bowl, whisk together flour, baking powder, salt, nutmeg, cinnamon, allspices
  3. Beat butter in Ventray Stand mixer over high speed until creamy, then add in sugar and continue to beat until light and fluffy. Scrap down two sides occasionally.
  4. Add one egg at a time, beating a minute in between each addition, then add in vanilla
  5. Add dry ingredients alternating with eggnog, fold it into butter mixture with a spatula (begin and end with dry ingredients)
  6. Add in orange zest and any remaining brandy
  7. For glaze, beat together powdered sugar, orange juice and brandy until thick
  8. Drizzle on cake

Oven Directions

  1. Preheat oven to 325F, adjust rack to the lower third, butter inside of a 9-inch bundt pan or 2 6-inch round pan (for layer cake)
  2. Bake for 50minutes or until centre is set
  3. Remove from oven and let it cool on rack completely before decorating

Tips

  1. For layered caked, its best to refrigerate and decorate at a later time
  2. You can also make it virgin without the rum or brandy

Ingredients

  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 2 tsp water
  • 1 cup raspberries
  • 1 cup strawberries
  • 1 ¾ cup all purpose flour
  • 2 cups sugar
  • ¾ cup natural unsweetened cocoa
  • 2 ¼ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 ½ tsp vanilla extract
  • 2 large eggs
  • 1 cup hot water
  • 9oz semi-sweet chocolate chips
  • ¾ cup heavy whipping cream
  • Chocolate Frosting 

Directions

  1. Berry Filling : Combine sugar, corn starch, water in saucepan over medium heat and stir to combine. Heat until sugar begins to melt; add in berries and coat with sugar mixture
  2. Cook until berries are soft, mash berries with a spatula. Remove from stove, set aside and let it cool and thicken, refrigerate until completely cool
  3. Chocolate Cake: Add flour, sugar cocoa, baking soda, baking powder and salt to Ventray Stand mixer bowl. Mix over medium to high speed until well combined
  4. Add in milk, vegetable oil, vanilla extract and eggs in another bowl and mix well
  5. Add wet ingredients into dry ingredients and beat until well combined
  6. Slowly add in hot water to the batter, and mix on low speed, scrape down sides of Ventray stand mixer bowl, make sure all ingredients are well combined
  7. Chocolate Ganache: Add chocolate chips to Ventray Stand Mixer bowl, heat heavy whip cream in microwave until hot, then pour into Ventray mixer bowl
  8. Use whisk attachment and mix over medium high speed until chocolate completely melted.
  9. Layer cake assemble: Level trim off any excess cake, make sure each layer is fairly flat. Drop frosting on to your cake board and place the first layer of the cake onto cake board
  10. Pipe a dam around the outside layer of the cake, spread jam in the inner circle of the dam Spread evenly so that you can place the second layer of the cake.
  11. Pipe frosting, and add berry filling. Then cover the cake with ganache.

Oven Directions

  1. Preheat oven to 350F, prepare 3 8’inch cake pans with non-stick baking spray and parchment paper at the bottom of the pan
  2. Divide batter evenly and pour into baking pans and bake for 20-25mins
  3. Remove from oven, allow it to cool for 10mins, remove from pan and cool completely on rack

Tips

  1. To decorate, you can add fresh berries, chocolate pieces and swirls of frosting.
  2. You can try different flavour buttercream frosting or other frosting for the cake.
  3. For special occasions, you can also try a white chocolage ganache to decorate (check out our chocolate ganache recipes)

  • 1½ cups of all purpose flour
  • 1 cup cocoa
  • 1 cup walnuts
  • 4 large eggs

  • 1 tsp of espresso powder

  • 2 cups unsweetened chocolate broken into pieces
  • 1½ cups of unsalted butter, softened

Directions

  1. Crack the 4 eggs into Ventray Mixing bowl, add cocoa, salt, baking powder, espresso powder, vanilla, then beat with flat beater at speed 2 for about 1 minute
  2. Increase to speed 3, continue beating for about 2-3 minutes
  3. Meanwhile, melt butter over medium-high heat in a saucepan, add in sugar and stir
  4. Add in butter to your egg mixture, and beat at speed 3 until completely smooth
  5. Add in flour and chocolate chips, beat at speed 3 then increase to speed 4 for at least 2 minutes until all ingredients fully combined

Oven Directions

  1. Pre-heat oven to 350°F, and lightly grease 13 by 9-inch glass baking pan
  2. Spread walnuts on a baking sheet, toast in oven for 8-10 minutes or until lightly browned. set aside and let it cool , then fold into batter
  3. Spoon batter into pan, bake for 30 minutes or until toothpick comes out clean
  4. Brownies should be firm, remove from oven, cool for 30 minutes, cut into squares
  5. Serve with vanilla ice cream

Tips

Add a scoop of ice cream or drizzle with caramel and enjoy this decadent dessert.

Directions

  1. Melt ¾ cup butter, let it cool
  2. In Ventray Stand mixer bowl, beat together sugar, melted butter over medium low speed, gradually add in 1 egg, ½ cup flour, cocoa powder and ¼ tsp salt. Mix until ingredients well combined, scrap batter into baking pan
  3. Clean and dry Ventray stand mixer bowl, beat together 1/3 cup butter, brown sugar, agave nectar, egg and vanilla extract. Then add in 1 cup flour, baking soda, and ¼ tsp salt
  4. Fold in ¾ cup chocolate nut pieces
  5. Pour nut cluster butter over cookie layer in baking pan, spread evenly
  6. Sprinkle remainder nut cluster pieces
  7. Once baked, cool on wire rack, slice into squares.

Oven Directions

  1. Preheat oven to 350F, line baking pan with parchment paper allow extra to overhang for easy removal
  2. Bake for 40-45mins covering with foil after first 15mins
