Royal Icing

Simple royal icing recipe using egg whites


  • 4 egg whites
  • 4 cups sifted confectioners’ sugar
  • 1 tsp lemon extract

Tip for colouring royal icing:
always start with minimum amount of colouring and work your way up by adding more colouring if you want a more intensified colour


  1. In Ventray Stand Mixer, beat egg whites at high speed until frothy
  2. Gradually add in sugar and lemon extract, beat on low speed until sugar is incorporated into the mixture
  3. Turn your Ventray Stand Mixer to high speed, beat for about 5-7 minutes until stiff peak forms.
  4. Separate your icing into different bowls, add in desired food colouring.
