Ingredients

For the bars:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/2 teaspoon vanilla extract

For the cream cheese frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Use Ventray Stand Mixer to cream together the softened butter, granulated sugar, and packed brown sugar until creamy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in pumpkin puree and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the pumpkin mixture, mixing until well combined.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, until a toothpick inserted into the center comes out clean.
  9. Allow to cool completely before frosting.

For the cream cheese frosting:

  1. Beat cream cheese and softened butter until smooth and creamy by using Ventray Stand Mixer.
  2. Gradually add powdered sugar, beating until smooth.
  3. Mix in vanilla extract.
  4. Spread the cream cheese frosting over the cooled pumpkin bars.
  5. Cut into bars and enjoy!
