Pistachio Biscotti
Foolproof easy Pistachio Biscotti

Ingredients
2 cups all-purpose flour
1 tsp baking powder
4 tbsp unsalted butter, room temperature
3/4 cup sugar
2 eggs
3/4 cup pistachio, chopped
3/4 tsp ground green cardamom
1 tsp vanila extract
2 egg
Directions
Add butter and sugar into
Ventray Stand mixer bowl
, beat over medium high speed until light and fluffy
Reduce speed to low speed, add in egg one at a time while continuously mixing
Add in pistachio, cardamom, vanilla extract mix only a few times.
Stir in flour with a spatula until dough forms, wrap and freeze the dough for 20-30 minutes
Remove from fridge, form a long log and bake.
Remove from oven, use bread knife and cut diagonally into 2-cm thick slices
Oven Directions
Preheat oven to 350F, place rack in middle position in the oven
Bake biscotti log for 35 minutes
Bake biscotti slices for another 20=25 minutes, remove from oven and cool completely on rack.
