MAURITIAN CHICKEN NOODLES

Ingredients

  • Mauritian noodles

  • Sliced chicken thigh removed skin and bone

  • Green bok choy

  • Egg

  • Diced carrot

  • Sliced red pepper

  • Sliced mushrooms

  • Corns

  • Sliced onion

  • Chopped spring onion

  • Finely chopped garlic

  • Mint leaves

  • Crushed chili

  • Salt

  • Black pepper

  • Cornstarch

  • Chicken stock

  • Olive oil

  • White wine

  • Soy sauce

  • Oyster sauce

  • Fish sauce

About the Cuisine 

The noodle recipe comes from a Mauritian chef. It uses various dressings and sauces, particularly seafood sauces. Traditional Mauritian noodles are thinner than spaghetti and very easy to cook. Chicken provides tons of protein, the mushroom is beneficial for your heart, and green bok choy boosts metabolism. This hot and passionate African flavor! Gives an exotic taste and surrounds you with an island flavor.

Toothsome and flavorful! Decent chicken and mushrooms are brought to life by oyster and fish sauces. Boiled bok choy creates in your mouth a natural, original taste after the spicy and salty savor. Super fresh and yummy! You can use other noodles, such as pasta, spaghetti, and lasagna. 

Directions

Step 1: Chicken Mixture

  1. Heat olive oil in a skillet over medium temp, add garlic, onion, and spring onion evenly.
  2. Increase the heat to high, add chicken, and stir after frying for 2 minutes.
  3. Add mushrooms, corn, and carrot, and stir-fry for 3 minutes.
  4. Add some white wine, and stir-fry for 2 minutes.
  5. Add black pepper, soy sauce, and fish sauce, stir for 2 minutes.
  6. Add some water to cover all ingredients, cook for 2 minutes.
  7. Turn off the heat, and add mint leaves on top; reserve.

Step 2: Boil Noodles & Bok Choy

  1. Boil Mauritian noodles with water for 1 minute in a saucepan, take them out, and cool down with iced water.
  2. Boil bok choy in chicken stock for 1 minute, take out, reserve. 
  3. Heat olive oil in a pan over medium heat, fry the egg until golden on both sides. 
  4. Add salt and black pepper. 

Step 3: Seasoning 

    1. Reheat the reserved chicken mixture, add remaining chicken stock.
    2. Add Mauritian noodles, cook for 1 minute.
    3. Mix cornstarch and water for thickening, and add into the skillet.
    4. Add red pepper, chili, black pepper, and fish sauce. Stir gently for 1 minute. 
    5. Taste, and add salt if desired.
    6. Turn off the heat, and then move the chicken noodles to a big bowl.
    7. Serve with the fried egg and bok choy on top.
