Gazpacho
Blender instant gazpacho soup,

Ingredients
2lbs ripe tomatoes, peeled, chopped
1 onion, chopped
1 cucumber peeled
1/2 green bell pepper
1/2 red bell pepper
1 scallions, peeled, chopped
2 cloves of garlic minced
1/3 cup extra virgin olive oil
3 tbsp balsamic vinegar
2 tsp hot pepper sauce
1 tsp ground cumin
1 cup chilled tomato juice
salt and pepper to taste
croutons, fresh herbs to garnish
Directions
In soup pot, stir together tomatoes, onion, cucumber, bell peppers, scallions, garlic.
Pour into blender, work in two batches, blend over medium speed until finely chopped.
Pour ready soup in large bowl, work on the second batch in blender
Combine soup in soup pot, add in oil, vinegar, hot sauce, and seasoning, add in cold tomato juice.
Serve and garnish with your choice of toppings
