Chocolate Berry Layered Cake

Super moist, layered with decadent chocolate ganache with fresh raspberries and you can add berry jams or filling inside.

Ingredients

  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 2 tsp water
  • 1 cup raspberries
  • 1 cup strawberries
  • 1 ¾ cup all purpose flour
  • 2 cups sugar
  • ¾ cup natural unsweetened cocoa
  • 2 ¼ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 ½ tsp vanilla extract
  • 2 large eggs
  • 1 cup hot water
  • 9oz semi-sweet chocolate chips
  • ¾ cup heavy whipping cream
  • Chocolate Frosting 

Directions

  1. Berry Filling : Combine sugar, corn starch, water in saucepan over medium heat and stir to combine. Heat until sugar begins to melt; add in berries and coat with sugar mixture
  2. Cook until berries are soft, mash berries with a spatula. Remove from stove, set aside and let it cool and thicken, refrigerate until completely cool
  3. Chocolate Cake: Add flour, sugar cocoa, baking soda, baking powder and salt to Ventray Stand mixer bowl. Mix over medium to high speed until well combined
  4. Add in milk, vegetable oil, vanilla extract and eggs in another bowl and mix well
  5. Add wet ingredients into dry ingredients and beat until well combined
  6. Slowly add in hot water to the batter, and mix on low speed, scrape down sides of Ventray stand mixer bowl, make sure all ingredients are well combined
  7. Chocolate Ganache: Add chocolate chips to Ventray Stand Mixer bowl, heat heavy whip cream in microwave until hot, then pour into Ventray mixer bowl
  8. Use whisk attachment and mix over medium high speed until chocolate completely melted.
  9. Layer cake assemble: Level trim off any excess cake, make sure each layer is fairly flat. Drop frosting on to your cake board and place the first layer of the cake onto cake board
  10. Pipe a dam around the outside layer of the cake, spread jam in the inner circle of the dam Spread evenly so that you can place the second layer of the cake.
  11. Pipe frosting, and add berry filling. Then cover the cake with ganache.

Oven Directions

  1. Preheat oven to 350F, prepare 3 8’inch cake pans with non-stick baking spray and parchment paper at the bottom of the pan
  2. Divide batter evenly and pour into baking pans and bake for 20-25mins
  3. Remove from oven, allow it to cool for 10mins, remove from pan and cool completely on rack

Tips

  1. To decorate, you can add fresh berries, chocolate pieces and swirls of frosting.
  2. You can try different flavour buttercream frosting or other frosting for the cake.
  3. For special occasions, you can also try a white chocolage ganache to decorate (check out our chocolate ganache recipes)
