Blueberry Lemon Loaf Cake
Easy delicious blueberry loaf cake, so good you can’t resist

Ingredients
1½ cup all purpose flour
2 tsp baking powder
¾ cup granulated sugar
¼ tsp salt
½ cup whole milk
¼ cup melted butter
2 large egg
1 tsp vanilla extract
1½ cups blueberries
1 lemon zest and juice
Directions
Mix together dry ingredients: flour, baking powder, salt
In
Ventray Stand Mixer
bowl, cream sugar, butter and lemon zest
Add in milk and eggs into Ventray Stand Mixer bowl, mix until well combined
Slowly add in flour mixture and lemon juice in batches, whisk until well combined
Fold in blueberries and lemon zest with a spatula
Pour batter into baking pan, sprinkle blueberries on top
Oven Directions
Preheat oven to 350 degrees, adjust oven rack to the middle position
Line and grease loaf pan
Bake for 45-55 mins, rotating half way through baking
Test with a toothpick to see if its ready
Remove from oven, let it cool for 10 minutes, transfer and cool completely on wire rack
