Directions

  1. Add chimichurri, parsley, garlic, chilli, salt, and some black pepper in a bowl. 
  2. Add more olive oil and some red wine vinegar to cover the solid seasonings. Mix for 1 minute, reserve.
  3. Grill tomahawk steak
  4. Rub oil, salt, black pepper all over the tomahawk steak.
  5. Add the steak into a hot griddle pan over high temp. 
  6. Grill each side for 2-3 minutes until the surface is burnt brown.  
  7. Roast the steak in an oven for 5-7 minutes until it gets to the internal temp of 55 degrees celsius. 
  8. Take out, cut into slices, and move to a plate.
  9. Top with chimichurri sauce, and serve.

  2. Increase the heat to high, add chicken, and stir after frying for 2 minutes.

  4. Add some white wine, and stir-fry for 2 minutes.
  5. Add black pepper, soy sauce, and fish sauce, stir for 2 minutes.
  6. Add some water to cover all ingredients, cook for 2 minutes.
  7. Turn off the heat, and add mint leaves on top; reserve.

Step 2: Boil Noodles & Bok Choy

  1. Boil Mauritian noodles with water for 1 minute in a saucepan, take them out, and cool down with iced water.
  2. Boil bok choy in chicken stock for 1 minute, take out, reserve. 
  3. Heat olive oil in a pan over medium heat, fry the egg until golden on both sides. 
  4. Add salt and black pepper. 

Step 3: Seasoning 

    1. Reheat the reserved chicken mixture, add remaining chicken stock.
    2. Add Mauritian noodles, cook for 1 minute.
    3. Mix cornstarch and water for thickening, and add into the skillet.
    4. Add red pepper, chili, black pepper, and fish sauce. Stir gently for 1 minute. 
    5. Taste, and add salt if desired.
    6. Turn off the heat, and then move the chicken noodles to a big bowl.
    7. Serve with the fried egg and bok choy on top.

    1. Mix soy sauce, fish sauce, cornstarch, and chilli in a bowl.
    2. Add steak, and marinate for 2 minutes.
    3. Heat coconut oil in a skillet over medium-high heat. 
    4. Stir-fry steak for 2 minutes until browned. 
    5. Add beef broth, and boil. 
    6. Reduce heat to low, and gently cook for 1 minute until slightly thickened. 
    7. Add onion and pepper, simmer for 3 minutes until the pepper is tender-crisp.
    8. Turn off the heat, reserve.

     

    Step 2: Simmer Rice

    1. Boil the remaining beef broth in a saucepan, add butter and salt. 
    2. Add rice, and stir until boiling. 
    3. Reduce heat to low, simmer for 5 minutes until the broth is absorbed. 
    4. Move the rice to a shallow bowl.
    5. Serve with the beef mixture on top evenly.

Chocolate Pecan Pie with a Bourbon Twist

Ingredients

  • 2 cups pecans
  • 1 stick salted butter, cut into cubes
  • ¾ cup packed brown sugar
  • 4 large eggs
  • 2/3 cup corn syrup
  • 2 tsp vanilla extract
  • 2 tbsp bourbon (optional)
  • ¾ cup chocolate chip
  • Powered sugar for sprinkling

Directions

  1. Coarsely chop pecans; add eggs, brown sugar, corn syrup, vanilla, and melted butter into Ventray Standmixer bowl
  2. Use whisk attachment and blend over medium speed
  3. Add in bourbon, and blend until all ingredients are thoroughly mixed. Stir in pecans, chocolate chips until evenly distributed

Oven Directions

  1. Preheat oven to 375F, toast pecans for 5-8 minutes or until fragrant
  2. Bake on the bottom rack of the oven for about 25 minutes
  3. Tent the pie crust with foil half way through baking, continue to bake for another 25 minutes or until the centre of the pie is set
  4. Remove pie from oven, set on rack and let it cool for at least 1 hour

Tips

Rewarm your pie at 325F for about 10-15 minutes to serve it warm
